Yolk Color
- Yolk color is diet, not freshness.
- Yolks run pale yellow to deep orange depending on what the flock ate that week.
- Dark orange means more forage and carotenoids. It is not a different egg and not a defect.
- More marigold, clover and bugs in the diet, more orange the yolk.
Shell Color
- Duck shells can be white, pale blue or green. It is breed, not feed.
- Chicken shells run white through brown, depending on breed.
- A mixed carton looks uneven on purpose.
Duck vs Chicken in the Kitchen
- Duck eggs are bigger, with more yolk fat and more white.
- Swap three duck eggs for every four chicken eggs in a baked recipe.
- Duck whites take longer to whip. Take the chill off them first.
- For frying, one duck egg fills a plate.
Storage
- Refrigerated at 34 to 40 degrees, eggs hold about six weeks.
- Duck eggs keep longer than chicken eggs on the shelf.
- To freeze, beat whole, and use within six months in cooked or baked food.
- A teaspoon of salt or a tablespoon of honey per pint of eggs keeps frozen yolks from thickening.
If You Are Allergic to Chicken Eggs
Many people who react to chicken eggs do tolerate duck eggs. That is a common pattern and not a guarantee. Talk with your physician before substituting duck eggs, especially after a severe reaction. Most layer rations base on soybean meal and corn, so ask us what the flock is on right now if soy or corn is part of your allergy picture.
